Pumpkin Sheet Cake

In the spirit of fall, I will be posting some yummy pumpkin related recipes.  I totally love anything pumpkin–and chocolate, but probably not together.  The first one is pumpkin sheet cake.  It is always a crowd favorite and it is super easy!  I hope you enjoy!

Pumpkin Sheet Cake

Ingredients: 1-16oz can of pumpkin, 2 cups sugar, 1 cup vegetable oil, 4 eggs, 2 cups flour, 2 tsp. baking soda, 1 tsp. ground cinnamon, 1/2 tsp. salt. 

Mix together pumpkin, sugar, oil, & eggs.  Combine flour, baking soda, cinnamon & salt; add to pumpkin mixture and beat until well blended.  Pur into a greased 15×10x1-in. baking pan.  Bake at 350 for 25-30 minutes, or until cake tests done.  Cool & frost!

**For those Betty Crocker types, you can frost with home made cream cheese frosting, but the recommended working girl version is from my old friend–the Pillsbury Dough Boy. ;)
